Ah, the Good Ole’ Days

The good ol’ days seemed to have had snowier winters, greener grass, and more toothsome apples. Perhaps it was so. One thing those good ol’ days definitely did not have was sweeter sweet corn. Only in the past few decades have plant breeders found new genes that shoot the sugar content of sweet corn sky-high.

Papoon corn, the first recorded variety of sweet corn, probably originated as a chance mutation of a single gene of field corn. That gene, the so-called sugary gene (abbreviated su), brought the sugar level in corn from four percent up to ten percent.

We gardeners have tried to make the most of that ten percent ever since the time when 18th century Plymouth, Massachusetts gardeners first grew Papoon corn. We pick an ear just when each kernel is creamy and as sweet as can be. Since sugars in corn start changing to starch as soon as the ear is picked, we eat the corn right out in the garden or else rush it to the kitchen to a pot of already boiling water. In only one day, half that sugar will turn to starch.

Sweetness in sweet corn took a quantum leap around the middle of the last century as a result of two genes. The first gene, called the shrunken-2 gene (abbreviated sh2) because of the way the dried kernels shrivel up, pushes the sugar level in corn up to a whopping thirty-seven percent. Not only that, but even two days after picking, that corn still has twenty-nine percent sugar.

The variety Illini Xtra Sweet was the first of the appropriately-named “supersweet” sweet corns. Other varieties with this gene are Early Xtra Sweet, American Dream, and SignatureXR. Kernels of these varieties have thick skins and lack a creamy texture.

The second gene responsible for sweeter sweet corn is the “sugar enhanced gene” (abbreviated se). The se gene is effective only in combination with the su gene of regular sweet corn, and the combination of the two genes results in varying degrees of sweetness, typically about twice as sweet as traditional sweet corn, and tender kernels. 

Still no need to scurry to the kitchen with se varieties, because they also retain their sweetness for a long time, but only because they start out sweeter. Kandy Korn EH, Sugar Buns EH, Silverado, and Snow Queen EH are varieties with the se gene. Many of these varieties have “EH,” which stands for “everlasting heritage,” in their names.

Juggling genes around to get the best of all worlds resulted in two more hybrid types of corn. “Synergistic” (syn) varieties have some su kernels from traditional sweet corn added to each ear of supersweet (shr) corn, typically about 25%, in an effort to balance sweetness, creaminess of texture, and tenderness. “Augmented sh2” varieties have some se and su genes added to an sh2 parent, basically combining all of the above genes, resulting in more sweetness and less toughness.

In case you’re wondering, none of these varieties are necessarily genetically modified (GM). All can be produced with traditional corn breeding techniques.

What’s Not to Love

Why doesn’t every gardener plant these new sweet corns? (Because of their sweetness and their ability to hang on to it longer after harvest, pretty much every farmer does limit their planting to these newfangled corns these days.) One reason not to plant these varieties is because these varieties need special care. Their seeds are finicky, and will rot just as soon as grow if planted in soils that are too cool, too dry, or too wet. Soil microorganisms also like that extra sweetness. Even after the seeds have been coaxed to germinate, the resulting seedlings often lack vigor. 

The sweeter sweet corns can lose almost all their sweetness if the wrong pollen blows onto their silks. Basically, all of the above varieties need to be isolated from all of the other above varieties except for the combination of traditional (su) varieties and sugar enhanced (se) varieties, although cross-pollination between the latter two will dilute full expression of each variety’s characteristics. The only way to minimize contamination between varieties is to separate them by at least 250 feet, or else plant varieties whose maturities differ by more than two weeks.

And what about flavor: Is sweetness all we want from sweet corn? The sweeter sweet corn varieties tend to taste watery and lack a “corny” flavor. If breeders could develop a sweet corn with ninety-five percent sugar, would that be even better? 

Corn with thirty-seven percent sugar tastes too sweet to many gardeners. I remember years ago stopping at the farmstand of one of the large local growers and asking them if they had any Golden Bantam, an old fashioned variety of sweet — not supersweet — corn for sale. The farmer’s wife grinned sheepishly and said they grow that variety for themselves.

A milk chocolate bar, with about fifty percent sugar, isn’t all that much sweeter than a supersweet variety of corn, some of which can have as much as 44% sugar.

For some of us, traditional sweet corn varieties — such as, in addition to Golden Bantam, once-popular varieties as Seneca Chief, Stowell’s Evergreen, Country Gentleman, and Silver Queen — are as delicious as corn needs to be if they are picked at just the right stage, then eaten within minutes. Ten percent sugar, especially when coupled with with a rich, corny flavor, and some degree of chewiness, is enough for me.

In the past, I’ve heaped praise on Golden Bantam corn, which was the standard for excellence in sweet corn a hundred or so years ago. I grow only this variety, more specifically “8-row Golden Bantam,” which distinguishes it from many Golden Bantam sired hybrids, such as Golden Cross Bantam and Top Cross Bantam.

Last year I feared I hit a bump in the road with Golden Bantam, as one-quarter of my planting yielded nothing worth harvesting due to what may have been northern corn leaf blight. I went ahead and planted 8-row Golden Bantam again this spring and am happy to say that the corn looks fine.

Four 20 by 3 foot beds, with double rows of “hills” 2 feet apart in each row and 3 plants per hill, provides all our household needs for fresh steamed or roasted ears and frozen kernels for winter.

BEAUTIFUL DESIGN AND UGLY BLIGHT

Who Made This Garden?

I visited a most beautiful garden this week, one in which all the elements of garden design were deftly combined. At ground level groundcovers presented pleasing and harmonious shades of green and varying leaf textures. Leafy plants, lichens, and mosses all contributed to the symphony, the whole scene knit together by large slabs of underlying rock.

In places, low-growing junipers and deciduous shrubs and trees brought the garden up from ground level. Particularly striking was a very large boulder atop of which grew some trees whose exposed roots embraced the boulder before reaching to the ground for water and nourishment. Shakkei, or “borrowed scenery,” an important element in Japanese garden design, played an important role. Distant mountain peaks created a dramatic backdrop in some views.

This garden also utilized what I like to call “luscious landscaping,” that is, the incorporation of dual purpose plants -– for beauty and for eating -– into the landscape. Lowbush blueberry, a plant whose dainty flowers hang like white bells in spring, whose healthy, green foliage ignites in crimson come fall, and whose stems glow red in winter, formed the bulk of the groundcover species. A few lingonberry plants interspersed here and there promised red berries in autumn and evergreen leaves as a foil for those red blueberry stems in winter.

And just where was this wonderful garden? Or gardens, I should say. They were in the high peaks of New York’s Adirondack mountains. The garden designer? God or one described by Darwin, take your pick. Beautiful, at any rate. 

Blight Here in the Valley

Back down here on the flatlands, the word “blight” is often bantered around in connection with tomatoes this time of year – your tomatoes, my tomatoes, basically, everybody’s tomatoes! A few years ago, it was late blight (Phytophthera infestans) that was the blight that was of special interest. Attacking both tomatoes and potatoes, this is the same disease that caused the potato famine in Ireland in the 19th century.

Late blight was a problem in the northeast that year due to a particular confluence of events: infected tomato plants offered at “big box” stores gave the blight its start and rainy, humid conditions kept it going.

The disease does not overwinter here in the north, except on infected potato tubers stored or left in the ground through winter. The way late blight arrives in the north is either on infected transplants or by hitchhiking up from southern fields, where it does overwinter, when weather conditions are just right. The spores can travel about 15 miles at a shot with the right winds coupled with cool, moist weather.

My tomato plants had their usual midsummer splotches and yellowing that year. I usually find pest problems more interesting than scary, I got a little worried about late blight. I tested for it by pulling a splotchy leaf off a plant, sliding it into a plastic bag, and waiting a day. White, fuzzy growth on the leaf would mean late blight. Testing was negative, although blight did eventually show up.

Only under the most severe conditions will I take special measures to control late blight. That year presented those conditions. I decided to spray my tomato plants, a measure to which I’d never before resorted. And it’s not because I grow mostly heirloom tomatoes; pretty much any and every tomato variety is susceptible to late blight. I used one of many copper sprays that are organically approved, still taking care not to dowse nearby other plants and to thoroughly protect myself while spraying.

That’s not to say all my tomato plants are the pictures of health this year, or any year. They do get some leaf yellowing and loss due to disease. Three diseases, in fact. One is the already mentioned late blight. The other two, which do rear their ugly heads reliably every year, are early blight and septoria leaf spot.

If you look closely at the leaf damage, you can tell which one(s) your tomatoes are hosting. Early blight (Alternaria solani), the most common of the three, marks leaves with dark-brown, round spots a half-inch in diameter, each surrounded by concentric rings.

The names of any one of the leaf spot diseases is enough to conjure up fear of plague, but fortunately, all three can be lumped together when it comes to control. The first line of defense against any of the leaf-spot diseases is to keep disease spores away from tomato plants. Spores spend the winter in old plant debris, then are awakened and splashed onto new tomato leaves by rain during the growing season. Early blight and septoria spend the winter in old tomato refuse on the ground. Potato tubers can overwinter this far north on stored potato tubers that are planted out for the next season.

All of which makes a good case for a thorough garden cleanup each fall. At the end of the season I load up my garden cart and haul over to the compost pile old tomato and potato stems, leaves, and fruits. 

During the growing season, any mulch — my choice is compost — keeps raindrops from splashing spores up onto plant leaves. Removing infected leaves during the growing season may also help control disease spread. I leave leaves intact, figuring more photosynthesis makes for stronger plants (except, of course, for any leaves too far gone to make a significant contribution to the plant).

Crop rotation each year moves tomato plants away from any spores left from the previous season’s crop. Plant tomatoes in a new location in the garden each year, never returning them to the same spot until four years have elapsed — admittedly a tall order in a small garden.

Another line of defense against leaf spot diseases, many diseases for that matter, is to create an environment inhospitable to them. Fungi thrive in dark, moist, humid places. Let plants bask in full sun without obstructions such as weeds, fences, or other garden plants that would slow air circulation.

I train each tomato plant to a single stem, which is staked, putting distance between the leaves and any spores on the soil, and exposing the plant to better air circulation. Spaced 18 inches apart, the plants yield less per plant than tomato plants allowed to run wild, but because they utilize a third dimension — up — more tomatoes per land area. MORE THAN JUST PEACHES AND PLUMS HERE

Preiselbeere, Kokemomo, Puolukka, Partridgeberry, Cowberry, Rock cranberry — or Lingonberry, They’re All the Same Fruit.

  Besides enjoying the season’s plums and peaches, I’m also enjoying a few uncommon fruits. Uncommon now. These fruits have been enjoyed by humans somewhere at sometime, just not extensively now. 

The most familiar of these to most would be lingonberries (Vaccinium vitis-ideae). As jam, in jars, that is, unless you’re Scandinavian, where this fruit is very popular harvested from the wild and then used in drinks, sauces, and pancakes.

Lingonberry, which is native throughout colder regions of the northern hemisphere, is often compared with our native cranberry. I think that does lingonberry an injustice. Both are diminutive plants, spreading as their stems root where they touch the ground, so could be edible groundcovers. Both are evergreen, but while lingonberry’s dainty leaves have the same green gloss as those of holly, and retain it all winter, cranberry leaves turn a muddy purple with the onset of cold weather in late fall.

I recently read that the berries are “not good to eat in their raw state as they are quite bitter.” That writer evidently never tasted lingonberries; I eat them raw all the time and find them delicious. And it’s not because my taste buds are so robust. I’d never pop a cranberry, which is closely related to lingonberry, into my mouth. Too, too sour.

To thrive, the plant needs similar conditions to those enjoyed by blueberry, cranberry, mountain laurel, rhododendron, and other lingonberry relatives. In addition to good drainage and abundant humus, the soil needs to be very acidic, with a pH ideally between 4.5 and 5.5.

Right after planting and then each year thereafter, some time between fall and spring, my lingonberries get mulched with a one- to two-inch depth of some finely divided, organic material that is not too rich in nutrients: sawdust, woodchips, chopped straw, or shredded leaves, for example. The mulch sifts down through the leaves and stems to keep the ground cool and moist, prevent frost from heaving plants in winter, and decompose to maintain high humus levels in the soil — all of which translates to larger berries and more of them.

The plants require little care beyond regular watering for the first couple of seasons.

Centuries of Flavor

Also ripe now is a fruit that has been enjoyed by humankind for the past seven thousand years (although not so much now)! At a site in northern Greece, early Neolithic peoples left traces of their meals of cornelian cherry (Cornus mas), along with remains of einkorn wheat, barley, lentils, and peas. It was also well-known to the ancient Greeks and Romans. The hard wood was reputedly the wood for chariot axles.

The plant was grown in monastery gardens of continental Europe through the Middle Ages and was introduced to Britain about the sixteenth century. By the eighteenth century, the plant was common in English gardens, where it was grown for its fruits which sometimes were called cornel plums.

The fruit was familiar enough to be found in European markets even up to the end of the nineteenth century. Cornelian cherries were especially popular in France and Germany, and the fruit reputedly was a favorite with children.

Native to regions of eastern Europe and western Asia, the cornelian cherry is still appreciated for its fruit in certain parts of these regions. Baskets of kizilcik, as the Turks call the fruit, are found in markets of Istanbul. The fruit is a popular backyard tree in gardens of Moldavia, Caucasia, Crimea, and the Ukraine.

When the fruit was popular in Britain, it was made into delicious tarts, and shops commonly sold rob de cornis, a thickened, sweet syrup of cornelian cherry fruits. The juice also added pizazz to cider and perry.

Depending on ripeness, fruit flavor varies from sweet to tart. It has a distinctive flavor and can be used in cookery at all stages. If tart fruit is allowed to sit for a day or two or three, the flavor becomes less tart and more mellow.

Cornelian cherry is a favored ingredient of Turkish serbert, a fruit drink sold in stores and from portable containers carried like knapsacks on the backs of street vendors. In the Ukraine, cornelian cherries are juiced, then bottled commercially into soft drinks. There, the fruits also are made into conserves, fermented into wine, distilled into a liqueur, and dried.

The plant is actually not a true cherry, but a species of dogwood. It is still widely, but mostly planted as an ornamental for its very early show of small, yellow blossoms, around the first day of spring here on the farmden.

Cornelian cherry is among my most successful fruit crops. Despite its early bloom, it has never failed to bear. Birds, insects, and diseases have little effect on production. Pruning is unnecessary. What else can you ask for from a fruit plant?

Intoxicatingly Delicious?

This last fruit is very uncommon, and I didn’t plant the tree mostly for its fruit. Hackberry (Celtis occidentalis) bark is gray with corky ridges that, especially in winter when illuminated by low-hanging sunlight, has that crisp, achromatic quality of photographs of the lunar landscape.

The fruit itself is refreshingly sweet, like a date. Problem is that the fruit is pea sized and contains an almost-pea-sized seed. So the fruits nothing more than a thin covering over the seed.

More prominent in the human diet is a close relative, one name of which is the lote tree (C. australis), which even figure in Greek mythology. When Zeuss drove Odysseus’ ships off course, the sailors finally found refuge in the Island of the Lote Eaters. Eating the fruits caused a pleasant drowsiness, to the extent that the sailors, forgetting their homes and friends, wished for nothing more than idling away on the island. Odysseus had to drag them back onto their ships.

The lote tree, native to Europe and temperate regions of Asia, is pretty cold-hardy (Zone 5). I have ordered seeds and should get to taste fruit of the lote tree in a few years. I might never leave the farmden.

COVER CROP CONFUSION

How Much Soil Organic Matter?

In last week’s blog I kept jumping the fence about cover crops. First I extolled their benefits. Then I wrote that they’re probably unnecessary in my heavily composted ground and possibly to blame for poor growth of some corn and tomatoes. Finally, I wound up stating that I do grow some cover crops anyway. No wonder I caused some confusion.
Oat cover cropsAll this prompted one reader, Peter, to comment with some specific questions that might also be of interest to some of you. I will now try to answer them.

His first question was: “How is percentage of organic matter in the soil determined.” “Organic matter” is carbon compounds; as such they can be oxidized, and when this happens they are lost from the soil as carbon dioxide and water. Microorganisms do this naturally in any soil as they feed on organic matter, in so doing releasing minerals associated with the organic matter in forms that plants can use for nourishment.

The way to test the percentage of organic matter in the soil is to weigh a sample, oxidize the organic matter, then weigh it again to measure the loss. Oxidation can be done by burning the sample at high temperature. Another way is to chemically oxidize a weighed sample using potassium dichromate and then measure how much dichromate is left after the reaction. (The latter reaction is more accurate than burning because carbonates in a soil will also lose carbon dioxide when heated, affecting the final weight.) 

Peter, I suggest against determining the percentage organic matter of your soil in your kitchen. Soil labs generally include percentage organic matter along with other test results. (I cover soil testing in my book Weedless Gardening.)

Peter also reported that his soil tests very high in phosphorus, potassium, magnesium, and calcium. Soils to which have been added lots of organic matter typically test very high or excessive levels of phosphorus and potassium. That doesn’t present a problem, possibly because, as I wrote last week, “Conventional soil tests are for mineral soils, not soils that are very high in organic matter.”

As far as the high levels of calcium and magnesium, I’m not sure about that. Excessive applications of dolomitic limestone would cause that, and that would also be reflected in a high pH.

To Cover Crop or Not to Cover Crop, That is the Question

Now for a more difficult question. Why do I plant cover crops if I don’t think they’re of benefit in my soil? I guess that’s because I’m aware of the known benefits of cover crops. If nothing else, the cover crop obviously protects the ground’s surface from the pounding of raindrops and wide swings in temperature. Even if I don’t notice any positive impact, they may be there, more subtly. And then there are the still unknown benefits of cover crops.
Cover crop, 3 beds with cabbageThe major, consistent negative impact of my late summer of fall planted oat cover crops has been to increase the number of weeds the following spring, specifically henbit (Lamium amplexicaule). For the past couple of years I’ve dealt with that problem by tarping those beds in spring for a couple of weeks or more. Or, not as good, just pulling out the henbit.

Because I only cover crop beds that are no longer needed for vegetable plants towards the end of the growing season, growing the cover crops doesn’t take up space in which I could otherwise grow vegetables.

It’s also almost no trouble to sprinkle the oat seed over the bed before laying down the inch of compost each bed gets every year.

And finally, I have to admit that I like the lush green look of the oat leaves, the leaves maintaining that look almost until the first day of winter. And even after that, they flop down on the ground, dying, but then hiding the brown compost beneath a tawny blanket.

Timely Planting

Last question: “When is the latest time to plant the cover crop?” Cooler weather and diminishing sunlight dramatically slow plant growth in autumn. Oats like that cool weather, and will germinate and sprout pretty late in the season. But there comes a time when so little growth will ensue that oats or any other cover crop is not really worth planting.

Here, about half way up New York’s Hudson Valley (USDA Hardiness Zone 5), I figure on the latest date to make planting a cover crop worthwhile is about October 1st.

CLOTHE THE GROUND

Something Good for the Soil

Soil has been called “the skin of the earth.” That “skin” nourishes much of life here, so let’s take care of it. Which is one reason for cover crops, that is, plants grown not directly for us, but specifically to maintain or improve soil health. Typical cover crops include rye, oats, buckwheat, clovers, and other mostly grains or legumes.
Oat cover cropThe most obvious benefit of a cover crop is the protection it affords the soil from wind and rain, either of which can carry away the most fertile surface layer. Also protection from temperature extremes. Another benefit is that cover crops can suppress weeds. Less obvious is cover crop plants’ ability to grab onto and bring back up to the surface layers nutrients that rain might otherwise wash beyond roots into the groundwater.

Some effects are even more subtle. Substances oozing from plant roots feed microbes and also bind soil particles to create small and large pores to create a good balance of air and water in the ground. Cover crops also can increase levels of all-important soil organic matter, which benefits plants and soils nutritionally, physically, and biologically in both known and unknown ways.

But Does My Ground Need It?

Despite the benefits of cover crops, you’ll rarely see them in my vegetable garden. Mostly, that’s because the beds are usually packed full of growing vegetables from very early to very late in the growing season. There’s nowhere to plant a cover crop! The vegetable plants themselves provide the same benefits as would a cover crop, especially since I plant at very close spacing, close enough, usually, to hide bare ground.

Planting cover crops in my garden to increase soil organic matter would be like taking coals to Newcastle. For decades, every year I’ve laid a one-inch blanket of compost over all my vegetable beds. (My book Weedless Gardening describes the whole system of soil care.) The result is soil organic matter levels, last time I tested, at about fifteen percent. No need for cover crops to boost my soil’s organic matter content.

Fifteen percent organic matter is very high. A typical, very good agricultural soil, such as the virgin Midwest prairies, was about five percent organic matter.

Then again, could fifteen precent be too high? Very high levels of organic matter lead to soil tests registering excessive levels of phosphorous and potassium. Traditionally, phosphorus was thought to be so tied up chemically in the soil that it would stay put, but some recent research indicates that water can push some phosphorus into the groundwater if phosphorus levels are high enough. 

Conventional soil tests are for mineral soils, not soils that are very high in organic matter. A soil with around fifteen percent organic matter would better be called a “growing medium” rather that a “soil. Soils naturally this high in organic matter are classified as histosols, commonly called bogs, peats, or moors. Such soils, in contrast to my garden soil, are typically low in plant nutrients.

An obvious way to assess soil management is — duh — to look at the plants and their growth. Everything looks fine.

Problem? Maybe, Maybe Not

Except for a couple of strange goings on in one of my two vegetable gardens. In one bed, planted this year to early turnips and lettuce, now in corn, the corn in half the bed is stunted. (The turnips and lettuce did fine.) Stunted cornIn another bed, tomatoes are doing fine, but are not as vigorous as they should be as compared with another bed of tomatoes in that garden.

Weakly & vigorous tomato bedsMy notes indicate that both beds received their annual blanket of compost, just like all the other beds. Last fall, when the compost was applied, I also sowed cover crops in those beds. Rather than my usual oats cover crop, which winter-kills so integrates well with my no-till system, I sowed crimson clover along with the oats. Why crimson clover? Because it’s pretty when it blooms in spring.

Crimson clover is allelopathic. Allelopathic plants can biochemically suppress growth or germination of nearby plants; the clover could have adversely affected growth of tomato and corn. Of course, only half the corn bed is stunted but clover germination, if I remember correctly, wasn’t uniform in that corn bed. I’ll file all this in the back of my head for future investigation.

Then again, oats, is also allelopathic, as are rye, sunflower, sorghum, and many other plants, including, most famously, black walnut. Allelopathy is often very specific, an allelopathic plant inhibiting the growth of only some species of plants. Said allelopathic plant might even promote growth of other plant species. Time, usually a couple of weeks, after an allelopathic plant is killed or removed, usually rids the soil of any allelopathic effect.

For completeness, I should mention that the corn and tomato bed problem could be traced to erratic behavior, this year, of my drip irrigation system, which has now been corrected.

I’m going to continue occasionally planting cover crops and will monitor more closely any positive or negative effects — in my garden. As they say in so many arenas: “Your results may differ . . .”

Heady Nights

It’s difficult to work outside in the garden these days, especially in early evening. No, not because of the heat. Not because of mosquitos either. The difficulty comes from the intoxicating aroma that wafts into the air each evening from the row of lilies just outside the east side of my vegetable garden.

These aren’t daylilies, which are mildly and pleasantly fragrant. Wild, orange daylilies are common along roadways and yellow and hybrid daylilies, often yellow, are common in mall parking lots. (That’s not at all a dis’; the plants are tough and beautiful, and I’ve planted them also.) They’re also not tiger lilies, which lack aroma and sport downward turned, dark red speckled orange flowers with recurved petals. 

My fragrant lilies are so-called oriental hybrid lilies, which are notable for their large flowers and strong fragrance. My favorite among those I grow is Casa Blanca. The flowers are large and lily white (what’d you expect?) except for the threadlike, pale green stamens emerging from their centers, with dark red anthers capping their ends.

Casa Blanca would be worth growing just for the look of the flowers; the fragrance, very sweet and very heady make this bulb a must-grow. Not for everyone, though. A few people dislike this fragrance. For some people it’s more than just stinkiness, the aroma causing nausea, dizziness, or congestion.

Casa Blanca’s stems can rise to about four feet tall, their upper portions circled with almost a dozen of those large blossoms in various stages of ripening. Some years, staked, persimmon orange, Sungold tomatoes grow in that bed, and the tomato and lily plants looked very pretty mingling together. (Tomatoes were, after all, once grown as ornamentals.) 

This year I’m growing kale in that bed which, besides good eating, provides a frilly base from which the lily stems rise.

In Good Taste

Turning to another of the senses . . . taste. Blueberries. They are among my most successful fruits and, as usual, the plants’ stems are bowing to the ground under a heavy load of berries this time of year.

Not to brag, but the average yield of a blueberry bush is 3 to 5 quarts. My blueberry bible, Blueberry Culture (1966), states that “proper cultural practices can increase the yield to as much as 25 pints per bush.” I average about 18 pints per bush, with some bushes yielding as much as 24 pints. Organically grown, of course.

I credit my good yield to periodic additions of sulfur to maintain acidity of pH 4.0-5.5, timely watering with drip irrigation especially the plants’ first few years, topping up of existing wood chip, wood shavings, or leafy mulch each fall with an additional 3 inch depth of any organic, weed-free mulch, and pruning every spring.

In year’s passed, I also added soybean meal for extra nitrogen to fuel stem growth. Blueberry flower buds develop along growing stems, with flowers open along those stems the following spring. More stem growth means more blueberries, to a point. For many years I have foregone soybean meal because the the plants were overly vigorous, creating a dense jungle that makes getting to the berries too difficult.

One other key to success and topnotch flavor is a net during the summer to fend off birds and — for best flavor — careful picking of only dead ripe fruits.

Water, Too Much or Too Little

So far, the growing season here in the Northeast has been one with both dry spells and wet spells, more than usual of each. Some recent thunderstorms fool many a gardener into thinking that the soil has been thoroughly wetted. But such rains are often only a drop in the bucket.

The only way to know for sure if enough rain has fallen for plants to really slurp up water is to check the soil or measure the actual amount of rainfall. A friend tells me he waters his plants every day. Every day! How much? It could be too much or too little, and probably is one or the other. I like to quantitate things so I measure rainfall or watering, as well as soil moisture, in a few different ways.

First, measuring water added to the soil: The ideal is about a 1 inch depth of water per week, which is equivalent to about a half a gallon per square foot of surface area. For hand watering a young tree, with an estimated root spread of only a couple of square feet, I fill the watering can with a gallon of water and sprinkle it on.

Rainfall, or the water from a sprinkler, could be measured with a straight-sided container. I use a rain gauge whose tapered body can break down the measurement into tenths of an inch, readable from indoors.

I usually measure the actual moisture in the soil with a handy little meter attached to a probe that slides a half a foot down into the soil. As expected, the meter told me today that the soil is very wet. Not surprising after 3 inches of rainfall, as measure in the rain gauge, two nights ago.

PERMACULTURE(?) HERE ON THE FARMDEN

True Accusation?

Accusations of my being a permaculturalist, that is, a practitioner of permaculture, are true, but only partially so. Yes, I grow peppers in a flower garden and persimmon as much for its beauty (see Landscaping with Fruit) as for its delicious fruits, also integrating other edibles right into the landscape. And, like permaculturalists, I do try to maximize use of the 3-dimensional space in my farmden with, for example, shade-loving black currants growing beneath my pawpaw trees.

I am also a permaculturalistic in maintaining the integrity of my soil by not tilling it or otherwise disrupting the structure that builds up naturally in undisturbed soils. New ground is prepared for planting by merely smothering existing mowed or stomped down vegetation. I mulch with compost, leaves, wood chips and other organic materials to keep bare ground from ever showing.

And like permaculturalists, I try to grow plants adapted to the setting so as to minimize pest problems. And poultry — ducks here on the farmden — wander freely, except in the vegetable gardens, to minimize pest problems, to provide fresh eggs, to add to the bucolic atmosphere, and to provide entertainment. And, in the shade of a Norway spruce, a rack holds up oak logs from which pop out shiitake mushrooms. I could go on.

Why I Am Not a Full-Fledged Permy

Despite the assertion of one young, self-described “expert” permaculturalist, I am not a permaculturalist. I tend a permaculturesque farmden. Why the “-esque”? Because I part with true permaculturalists in a few critical ways.

Let’s begin with soil preparation. I smother existing vegetation beneath a few, typically four, sheets of newspaper topped with compost or some other weed-free, organic mulch. (I describe my methods in more detail in my book Weedless Gardening.) Many, perhaps most or all, permaculturalists prefer using corrugated cardboard from boxes as that first layer. The longevity of that cardboard on the ground is seen as an asset over paper. But I use paper so that soon after existing vegetation is smothered, the mulch and the soil below can begin to meld together. I don’t want any barrier to water and nutrients, or bacteria, fungi, earthworms, and myriad other soil organisms in place any longer than necessary.

I part ways with permaculturalists by growing my vegetables rectilinearly, in straight rows within rectangular 3-foot-wide beds. Yes, the idea of organically shaped beds and keyhole gardens is very appealing –- on paper. But time, my time, is also an important element in the garden, and it takes a lot longer to maintain curved and somewhat randomly shaped bed than it does rectilinear beds.

And then there’s the permy way of tucking, say lettuce plants, beneath fruiting shrubs and trees. But I eat a lot of vegetables and there’s nothing like straight rows running down straight beds for packing a lot of vegetables into a given area, and making planting, weeding, and harvesting quicker and easier. When I go out to pick some vegetables for a meal, I don’t want to be remembering where I tucked the lettuce and wending my way through trees and then crawling beneath some shrub to get at it.

Permaculture originated and thrives in the dry climates of Australia and our Southwest. Over much of the country, and especially here in the Northeast, rainfall coaxes very exuberant growth from crop plants and weeds alike. Too many permaculturalists are liable to spend their first few permaculture years admiring their efficient and attractive use of space, and all the years hence cursing all the time needed cutting and weeding needed to keep growth of various plants in balance. What I need are some straight lines and a little elbow room.

(I have been hired more than once as a consultant on a property designed and planted by a true permaculturalist. I’m sure it looked great on paper and for the first few years, until it became a tangled mass of plants, more than most people could handle long term. Sometimes, the best course moving forward is to remove everything for a fresh, perhaps permaculturalesque start this time around. As one landowner told me, “a few years back I was ‘permacultured’ by some fine folks. I have been fighting my way back ever since.”)

“Forest gardening,” growing and eating from your planted forest, is receiving growing interest within permaculture circles. As you might guess, I’m also not a forest gardener, despite the fact that I have integrated fruiting trees, which do come from forests somewhere, as well as chestnuts, English walnuts, black walnuts, and other nutty things into my landscape.

I do have a miniforest in a portion of my meadow. The cool shade beneath the now large buartnut, shellbark hickory, maple, and river birch trees is not planted with herbs and vegetables for nibbling. It’s mostly a leafy mulch that fall in autumn, as in any forest floor. Oh, with a bow to forest gardening, I also planted ramps there.

I plant fruits, vegetables, and nuts to provide sustenance, not just a nibble here and there. 

I Aim for Good Food, Not a Concept

I’m growing my own fruits and vegetables because I want great-tasting food. It seems to me that permaculture is usually about making growing plants easier. Nothing wrong with that, of course, except sometimes plants that are easiest to grow aren’t those that have the best flavor. I grow elderberries (back in my more hard-core permaculture planting along with aronia, rosa rugosa, seaberry, and highbush cranberry). Could anybody claim that a fresh picked elderberry can hold a candle to, flavorwise, a fresh picked blueberry?

Speaking of blueberry, they are easy to grow. But, if you want best production of flavorful berries, best to put some effort into getting the soil right, pruning correctly and annually, and netting to fend off birds so you can harvest truly ripe berries. Grapes? They need abundant sunlight, not the shady but easily supplied support of a nearby tree, for best quality and easy picking. Pruning is critical for topnotch flavor and pest control. It all takes effort, but is worth it.

Although I am very intimate and knowledgeable about the plants I grow, I am no expert on permaculture. Perhaps I have misconstrued certain permaculture techniques or am totally missing the concept (even though I was accused of being a permaculturalist). I welcome feedback.

Call for Recipes

About 30 years ago I wrote a book about fruits that were uncommon yet were uncommonly delicious and uncommonly easy to grow. That book has since gone out of print. It will soon be back in print, updated with additional “uncommon” fruits and, this time around, recipes.

The fruits I wrote about are all excellent eaten fresh. I am quite good at growing fruits; not so for doing anything else with them beyond transporting them from hand to mouth.

I am eliciting recipes from chefs and amateurs who have access to any of these fruits and can conjure up delicious jams, soups, tarts, salads, desserts, etc. — savory or sweet — that truly highlights their unique flavors. (I’ve read too many recipes that take a smidgen of fruit and stir it up with plenty of flour, sugar, butter, cream, whatever; to me that’s not really highlighting a fruit’s unique flavor or texture.)

I will, of course, credit any recipes published with their inventor as well as affiliations. Here’s a list of the fruits. It’s a list chapter headings and subheadings from the book. Hedging my Bets

This year has been such a bountiful year for fruits that even my peach tree has set fruit. Peaches are particularly pretty trees, in bloom showered with pink blossoms and the rest of the season with their healthy-looking, lance shaped leaves that gracefully curve downwards. Since I rarely get fruit from my tree — late frost, plum curculio, brown rot, and oriental fruit moth, among other maladies — I actually grow it mainly as an ornamental.

Peach tree, before hedgingBecause I grow it mostly as an ornamental and because it grows right near one corner of my vegetable garden, I don’t want it to grow too large. Last year at about this time I decided to hedge its crown into a pleasing shape.

Peaches bear fruit on one year old wood. I figured the unpruned lower portions of the hedged branches would set fruit buds in case the tree, in conjunction with the weather and pests, was inclined to set fruit the following year. That’s this year, and the tree is bearing fruit.

I do prune again in spring while the tree is still dormant. Plenty of thinning cuts are needed to decongest the branches. Also some heading cuts to stimulated buds to grow into shoots for the following year’s flowers and fruits.

Yesterday I again hedged the tree down to shapely proportions, allowing it the possibility of a fruitful repeat performance next year.

 

UNCOMMON BERRIES, FOR SOME

Note: If you live in a very hot summer climate, skip Part A and proceed to Part B.

Part A. Perfect for Ambulant Consumption

Part A. It’s about time that gooseberries got some respect. The plants are easy to grow, they tolerate shade, are usually ignored by deer and birds, except my ducks, and they can have excellent flavor. They don’t do very well or yield the tastiest fruits in hot summer climates, hence “Skip to Part B,” although the coolness of shade can somewhat overcome that deficiency.

Gooseberry flavor is what eludes most people. And with good reason; relatively few of you have tasted gooseberries, let alone good-tasting varieties. The reason is that gooseberries belong to the Ribes genus, many plants of which are susceptible to a disease called white pine blister rust. This disease, also attacking white pines, need both white pines and susceptible Ribes plants to complete its life cycle.

When the rust showed up on American shores about 100 years ago, white pine was an important lumber crop so the U.S. government sought to control the rust be getting rid of all Ribes plants. Not only were gooseberries illegal to plant but if you already had gooseberries or currants, another Ribes species, in your garden, fellas from the Civilian Conservation Corps were apt to descent out of the woods into you garden to rip them out.

Long story short: Before the rust, gooseberries were an up and coming fruit, just like blueberries, which were relatively unknown except near where they grew wild. The ban was not as effective as was hoped. Disease could spread from the many wild Ribes haunt that our woodlands, and under the right conditions infective spores can be carried for hundreds of miles. On top of that, gooseberries and redcurrants are not very susceptible to the fungus.

The federal ban was lifted in 1966 and put under state mandate, but two generations of farmers and gardeners had forgotten about gooseberries. Relatively few states nowadays ban gooseberries.

I once nurtured my own gooseberry variety collection of almost 50 varieties, a collection that now has been pared down to the most desirable dozen or so. I only grow what are known as “dessert” varieties of gooseberry, ones that have great flavor straight off the bushes. As Edward Bunyard wrote in his 1929 classic The Anatomy of Dessert, “The gooseberry is the fruit of course par excellence for ambulant consumption.”

This growing season has, so far, been one of the best fruit years ever, so I’m taking particular note of ripening time and flavor of my gooseberries. (Like a fine wine, though, they do seem to have vintage years.) First to ripen here is the variety Canada 0-273; its main qualities are that the plant is always productive and yielding large and early fruit.

Next comes Poorman, an unfortunate name for a very delectable berry. Almost ripe now is Captivator, the variety I would grow if I were to grow only one variety. It’s delicious and pretty much thornless.

Soon to ripen are Red Jacket, very reliable and productive, with good flavor, and Welcome. Welcome is still with me for sentimental reasons; it was one of the first fruits I ever planted, decades ago, and has traveled with me to my gardens from Wisconsin to Delaware to Maryland to New York. It’s flavor is very similar to “SweeTart” candies.

Following the above varieties is another variety that would be on a must have list. Hinnonmakis Yellow is yellowish-green when ripe and has a flavor that hints of apricot. Some people confuse it with Hinnonmakis Red, which has poor flavor, and whose real name is, I believe, Lepaa Red. Also soon to ripen is Black Satin which has a rich, wine-y flavor.

That’s not all of them but does give you an inkling of the merits of the most significant ones. There are literally hundreds of varieties of gooseberries, spurred in part beginning in 18th century England, by gooseberry competitions, held usually in local inns, to see who could grow the largest fruits. The gaiety of singing and refreshments at these shows was offset by the solemn weighing of fruits.

Those gooseberries were bred strictly for size. I plant for flavor. Did I mention, pest problems of gooseberry? Powdery mildew and leaf spot diseases are potential problems but all the varieties I mentions are resistant to these diseases.

Part B. Some Mulberries are Better than Others

Part B. Some kind of mulberry can be grown just about everywhere. Here in the Hudson Valley, we have wild or cultivated red mulberries, which are native, white mulberries, most of which were imported from Asia in the early 1800s, and hybrids of the two. Don’t expect the color of a tree’s fruit, despite even the botanical names, Morus rubra and M. alba, to tell you what species you have before you. Many “white” (M. alba) mulberries or their hybrids bear black fruit.

To throw yet another wrench into the nomenclature, there’s yet another species, M. nigra or black mulberry, with black fruits. I consider black mulberry to be among the best-flavored of all fruits, not just mulberries. Unfortunately, it’s not hardy here. I grow it in a pot.

Most years birds get just about all my mulberries; not this year, perhaps because of an abundance of other fruits. So I’ve been getting a good taste of them.

I find the flavor of most wild mulberries cloying. Not so for the two varieties I grow.

I, along with many others, have lent high praise to the variety Illinois Everbearing, often likening its flavor to that of black mulberries. This year I’ve reconsidered; Illinois Everbearing fruits are better than the average mulberry you might see growing in Eastern North America, but not nearly as good as black mulberry. Illinois Everbearing does live up to the “everbearing” in its name, yielding berry after berry for weeks on end.

My other variety is Oscar. It’s delicious, with a nice balance of acidity and sweetness.

Other years my impression of the two varieties has been different. Perhaps mulberries and gooseberries have vintage years that influence the flavors of particular varieties.

I actually grow one more variety of mulberry, Pakistani. This is yet another species, M. Macloura, that was once considered a kind of white mulberry. Pakistani, like black mulberry isn’t hardy here (probably hardy to Zone 7, perhaps colder) so I grow it in a pot. The fruit is delicious and large, sometimes as much as five inches long! My potted tree’s fruits are only an inch and a half long, but they’re as delicious as black mulberries. Different flavor though.

SOMETHINGS FOR THE NOSE, THE EYES, AND THE TASTEBUDS

Makes a Lot of Scents

Many years ago, at this time of the year, I was hiking in the nearby Shawangunk Mountains, in Minnewaska State Park, when a most delectable, spicy-sweet aroma wafted past my nose. I followed my nose off the trail and into the woods. After stepping over and around fallen stumps in boggy soil and ducking under low-hanging branches, I came upon the source of that aroma: the white flowers of a large swamp azalea (Rhododendron viscosum).

  Last night as I lay in the comfort of my bed and was about to drift off to sleep, that very same scent drifted into the open bedroom window. I immediately knew the source of that aroma: a swamp azalea that I had planted in a bed along the north side of my home back in 2006.

My yard is obviously quite a different habitat from that of Minnewaska woods, and especially where that wild swamp azalea grew. Besides shade and moist ground, that forested site‘s soil is very acidic, relatively poor in nutrients, and rich in humus.

  The bed near my window emulates those conditions. It’s on the north side of the house, so it’s partially shaded. I added sulfur, a naturally mined mineral, to bring the pH down to about 5. I dug in abundant sawdust to build up humus in the soil, and mulch each year with more sawdust or autumn leaves to maintain it. Drip irrigation tubes running through the bed automatically provide daily watering to maintain a moist soil. 

Besides aroma, swamp azalea doesn’t have much going for it. The plant is deciduous, so fades out of view in winter. I’ve read that fall leaf color can be very nice, but never noticed it. The white flowers are nice enough, but nothing spectacular to look at. For me, this plant is all about scent.

The Family is Invited

  Scent alone from one swamp azalea plant wouldn’t justify drip irrigation, annual mulching, and periodic additions of sulfur. So that bed near my bedroom window was developed as a home also for other plants that enjoy the same special soil conditions as swamp azalea. Mostly, these are plants in the heath family (Ericaceae), which includes blueberry, lingonberry, mountain laurel, rhododendron, other kinds of azaleas, and, of course, heath and heather.

Most of the above family members are growing in that bed. Right after the swamp azalea blossoms wave goodbye for the season, lowbush blueberries begin ripening, then huckleberries, and then lingonberries. Earlier in the season, rich red or lily white ornamental rhododendron blossoms were followed by mountain laurel blossoms, which finished blooming a couple of weeks ago.

Even beyond blossoms and fruits, this bed offers a visual symphony of harmonies and contrasts. The rhododendrons and mountain laurels are mostly dwarf varieties that are 3 foot high mounds of glossy greenery year-round. The lingonberries and lowbush blueberries knit together everything right at ground level, both plants spreading via underground runners to intertwine for a dense ground cover. In fall, blueberry’s crimson leaves and then, through winter, its reddish stems, contrast pleasantly with lingonberry’s mouse-ear-sized, evergreen leaves and red, pea-sized berries.

The lingonberries need not be picked as soon as they ripen because they’ll hang in good visual and gustatory condition for many months.

LingonberryI’ve invited a few non-family members into the bed. Most notable are a witchhazel that’s covered in fragrant, yellow blossoms in late winter and a stewartia that is now spreading open the white petals of its camellia-like blossoms.

Still Planting Vegetables

  A friend has a new vegetable garden which she has been planting all spring. She has two beds not yet planted and asked me if and what she could still plant there for this season. “Plenty,” I told her.

  For starters, how about a late crop of bush beans and/or zucchini? Bush beans start to peter out after bearing for a couple of weeks, which is why I make 3 plantings each season, the first in the middle of May.

The same goes for cucumbers, which in a few weeks usually succumb to bacterial wilt. Two plantings, the second sown about now, often do the trick to keep the cukes a comin’. Here on the farmden, the varieties Shintokiwa and Little Leaf H-19 seem better able to fend off pests than other varieties I’ve grown. Also, to a lesser extent, the variety Suhyo (sometimes spelt Suyo). 

And, of course, zucchini or any other summer squash. Zucchini typically succumbs to borers or mildew by midsummer; a fresh planting keeps zucchini coming on all season long. One caution is not to plant too much zucchini! Any more than a few plants and you’ll be forced to come up with concoctions such as zucchini bread to use up the excess.
